What Makes Us Special

Cherries — The Starting Point

Everything begins with the coffee cherry. Our estates in Karnataka produce hand-harvested cherries that form the raw input for all processing that follows.

Sorting & Classification

Freshly harvested cherries are sorted and classified by size, weight, and quality. This critical step separates the best fruit from defective or unripe cherries before any processing begins.

Wet Processing Path

Cherries go through pulping (removing the skin, producing pulp as a byproduct), followed by fermentation to break down mucilage. The beans are then washed and graded — the mucilage is separated off — yielding washed or parchment coffee. This is dried, then peeled and polished (removing the parchment silverskin), graded once more, and the result is green coffee.

Dry Processing Path

Alternatively, cherries undergo dry processing — they are dried whole to produce dry coffee, then hulled (husks removed as a byproduct), and graded. This natural method produces green coffee with a fuller, fruit-forward character.

Grading, Sorting & Shipping

Green coffee from both processing paths is graded, sorted once more for quality, and shipped. Before export, the green beans are thoroughly cleaned to ensure they meet international standards.

Cleaning & Optional Decaffeination

After shipping, green coffee is cleaned. Where required, a portion undergoes decaffeination before rejoining the main processing line — ensuring we can cater to all consumer preferences without compromising on quality.

Blending & Roasting

Clean green beans are blended to our signature profiles, then roasted in small batches. Roasting is where the chemistry transforms raw beans into the aromatic, flavour-rich coffee our customers love.

Grinding & Delivery to Consumers

Roasted coffee is ground and dispatched directly to consumers. A portion goes through liquor extraction, followed by drying, to produce soluble (instant) coffee — which also reaches consumers. Every format is sealed for freshness at point of dispatch.
